The grapes are harvested by hand from 23-year-old vines on the northern slope of the Kanonberg. The grapes are pressed whole and then left overnight with the enzyme. Once the yeast has been removed, the juice is mixed with selected yeast strains to start fermentation in concrete tanks. Once fermentation begins, the wine is transferred to 40 % new and 30 % second-fill French oak barrels and 30 % third-fill French oak barrels, where it ferments for 10 months before bottling.
