Vinification: Barrique

The Merlot (65%) and Cabernet Sauvignon (35%) come from older vines (9 and 21 years old respectively) planted on slate (Merlot) and granite (Cabernet Sauvignon) soils.

The Merlot was fermented on skins for 8 days, pumped over 3-4 times a day, and malolactic fermentation was completed in barrel. The wine was then matured for 10 months in a combination of new (50 % of the wine), second-fill (10 %), third-fill (25 %) and older (15 %) French oak barrels.

The Friesland Merlot-Cabernet Sauvignon has a dark maroon-coloured core with a light red rim and is a full-bodied, noble, structured and silky balanced wine.

The Merlot component brings soft tannins, coffee and plum flavours to the blend, while the Cabernet Sauvignon component adds structure, weight and aromas of blackcurrant and chocolate.
