Suider Terras, the revival of a legend, has an almost mythical status as a source of unique and age-worthy Sauvignon Blanc. The barrel-fermented 2017 will continue to develop seamlessly and mature for up to 10 years.
The grapes are harvested by hand from 37-year-old vines on the northern slope of Canon Hill. The grapes are pressed whole and then macerated overnight with enzymes. After racking off the lees, the juice is inoculated with selected yeast strains to begin fermentation in concrete tanks. Once fermentation begins, the wine is transferred to 100% new French oak barrels where it ferments for 11 months before bottling.
