Carla Pauw, the winemaker behind the Saltare Wines, works from an old vaulted cellar in Stellenbosch near Cape Town. She selects grapes from different regions of South Africa and produces small quantities of exquisite wines. The almost oily textural character of this Chenin Blanc with beautiful aromas of lime blossom, tangerine, gooseberry and a hint of fynbos offers fresh apricot, marmalade, honey, a mineral texture and a long, clean finish on the palate.

The natural barrel fermentation makes it a perfect accompaniment to food like no other and thus goes equally well with meat and fish dishes or compliments any cheese platter. It has already had sufficient time to develop in the bottle and has had plenty of time to age.
